Did you ever hear a joke or see a comedy TV show about the husband who brought home his boss for supper unexpectedly? It happened to me the other night. Fortunately it wasn't a canned soup and toasted cheese sandwich night. My husband isn't crazy about chicken; but the house smelled good when they walked in, and Henry seemed to enjoy the meal. Here's the recipe from a 1991 Southern Living magazine.
1/2 cup fine dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/2 teaspoon dried whole basil
1/2 teaspoon dried whole thyme
4 chicken breast halves, boneless and skinless
1/4 cup butter melted
Combine first five ingredients in a bag and shake well. Cut chicken into 1" pieces. Dip into melted butter and shake a few at a time in the bread crumb mixture. Place on lightly greased baking sheet. Baket at 400° for 20 minutes or until tender.

First of all I would have killed my husband for not telling me we were having company for dinner. Then I would say a quick prayer over him and whip up something hoping that it would turn out good.

Yummmmm, I copied this recipe, it sounds good and easy! I had to chuckle when reading this post, because I remember David bringing home an out of town client for dinner, when I was 7 months pregnant and the house was a mess..... I don't remember what I made... but I was not a happy camper.... Ha!

This sounds yummy, I will need to give it a try...chicken is a favorite at my house! I am sure that soup and grilled cheese would have been fine with the guest, it is the time together that counts! Have a enjoyable weekend! Sending blessings from my part of PA!
This is the.best.recipe.ever for chicken nuggets. My friends in high school used to always want a nugget when I brought them for lunch. I'm so glad you posted this because can you believe it, I don't have a copy of it! I'm going to copy it down and wow everyone I know. :)
