My dad had a sweet tooth. He lived in a nursing home before he passed away, and some evenings we would ride over after supper to give him a treat before he'd go to bed. I made these applesauce cookies once, and he loved them. The recipe doesn't call for it, but I frosted them with buttercream frosting because I knew he would like it.

Applesauce Cookies
2 cups sugar
1 cup shortening
2 eggs
3 1/2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
1 teaspoon salt
2 cups quick rolled oats
2 cups applesauce
1 cup chopped nuts
1 cup raisins

Cream sugar and shortening and stir in the eggs. Sift dry ingredients (except for the oatmeal, nuts, and raisings). Add the flour mixture and oats to the creamed mixture alternately with the applesauce. Beat well. Stir in the nuts and raisins.

Let the whole mixture sit for about an hour to allow the oats to soak up the excess moisture. After an hour, drop spoonfuls of the dough onto greased baking sheet. Baket at 350° for 10 to 15 minutes. Let them cool before adding frosting. These are also good for breakfast.

I will soon have a book full of your recipes Mary...they sound so yummy and I want to make them all! This recipe will please my hubby WITH the icing, he has a real sweet tooth too!
