Chocolate-Caramel-Cracker Bars


Here's a tip for this cookie recipe - make them when you can share them. It's too easy to eat most of them.

54 Keebler Club crackers
1 14-ounce can sweetened condensed milk (not evaporated)
1 cup packed brown sugar
1/2 cup butter
1/4 cup milk
1 cup graham cracker crumbs
1 cup semi-sweet chocolate chips
2 tablespoons milk
1 cup peanut butter

Great a 9x13 baking pan. Place half of the Club crackers in the bottom.

In a medium saucepan, combine the condensed milk, brown sugar, butter, and 1/4 cup milk. Stirring frequently, cook over low heat until butter has melted. Increase the heat to medium high and bring mixture to a boil. Let it boil for five minutes stirring constantly. Remove from the heat and stir in the graham cracker crumbs.

Pour half of this boiled mixture over the Club crackers in the pan. Arrange the remaining crackers over the caramel. Top with the remaining caramel mixture.

In a small saucepan, heat the chocolate chips and the two tablespoons of milk over low heat or until the chocolate is smooth, stirring frequently. Stir in peanut butter and spread over the bars. Refrigerate at least 30 minutes or until set.

These are very good!

Oh my word, I think I just had a taste of this very tasty delight today! A student made it for demonstration purposes in a class, and the teacher brought a piece of it to each of us in the office. The ingredients and the recipe sound just like what we received today....it was yummy. So now thanks to you I have the recipe, thank you Mary!
